An Incremental Approach.
Looking for a quick fix? Sudden, major changes in diet and nutrition are, for many reasons, generally unsustainable. Many have experienced the extreme highs and frustrating lows of rapid weight loss followed by rapid weight gain.
Change can be difficult, but Skylark Nutrition believes major changes are best made in increments over time. We do not create an illusion that clients will notice significant short-term change, but guarantee that our step-structured services and methods will contribute to the accomplishment of significant long-term objectives and positive lifestyle improvements.
For this reason, we work primarily with individuals and corporations committed to the "long haul" of making incremental changes that impact lifestyle and culture, one ingredient, one meal, one day at a time.

Skylark Nutrition offers services and programming that are about more than just creating meal plans, counting calories, limiting carbohydrates and food substitutions. We endeavor to drive a revolution of lifestyle and culture with dramatic, wide-reaching changes that not only impact the health of the individual, but that of the family, and ultimately that of entire communities.

Sarah Koontz, Founder
Sarah's interest in food and nutrition was sparked in the kitchen as a child cooking and baking with her mother and grandmother. While exploring careers in the 8th grade, Sarah discovered her future in nutrition and dietetics. In 2009, she graduated from the University of Incarnate Word in San Antonio, Texas with a Bachelor of Science in Nutrition, and completed her dietetic internship and board exam in May 2010. For 3 1/2 years Sarah worked for the San Antonio Food Bank in the Nutrition, Health, and Wellness Division as a nutrition education coordinator, and then for 1 year with the City of San Antonio on a CDC Sodium Reduction Grant.

In 2014, Sarah gave birth to the first of three children, and has since worked in the home keeping her family healthy, nourished, and happy. Eight years after the birth of her first child, armed with an arsenal of real-life experiences in feeding her family of five, she began answering the call for nutrition consultations and assessments leading to the founding of Skylark Nutrition services.
From prenatal, lactation, and early childhood nutrition experience, to her community education work with schools, municipalities, corporations, and community centers, as well as being married to and working with an elite endurance athlete, Sarah has developed a unique method of nutrition and health practice with a focus on simplicity and the needs of the individual.
Sarah enjoys the creative freedom and ability to express herself through cooking and baking, as well as experimenting with new foods and recipes.
